Eggplant Meatloaf Recipe
Ingredients:
- 1 lb lean ground beef
- 1 lb ground lamb
- 1/4 lb pork sausage
- 2 cloves garlic, chopped
- 2 eggs, beaten
- 1 large eggplant, chopped
- 1 teaspoon chili powder
- 1/4 teaspoon pepper
- 1 onion, diced
Instructions:
1. In a skillet, brown both sides of the ground beef and ground lamb.
2. In a saucepan, boil the eggplant until soft.
3. In a mixing bowl, add in the browned beef and lamb, cooked eggplant, pork sausage, garlic, eggs, chili powder, pepper and onion. Combine and mix well.
4. Transfer everything into a baking dish and bake it for 45 minutes at 350°F (176°C).
5. Serve and enjoy!
